CHEF MIKE ARQUINES  vs. CHEF PHILLIP ESTEBAN

 Meet Chef Mike Arquines.  Chef | Owner - The LAB: Dining Sessions & Co-Founder | Head Roaster | Product R&D - Mostra Coffee & One of our featured competing Chefs for Boodle Fight: Round 2!!!  Originally from the Bay Area in Northern California, Chef Mike Arquines moved to San Diego in 2001 to attend Nursing School.  With only a few more classes left until graduation to become a registered nurse, Mike realized his true passion was cooking and followed his heart into dropping out of nursing school and enrolling in the Art Institute in San Diego, graduating with a degree in Culinary Arts/Management in 2008.    Mike honed his skills working in some of the finest kitchens around the country, including Charlie Trotters in Chicago and Le Bernardin in New York City.  In 2008, he founded The LAB: Dining Sessions, which aims to deliver to dinner guests a savory, culinary experience, and in 2013, co-founded and became the Head Roaster for Mostra Coffee, an award-winning specialty coffee micro-roaster in San Diego.  In 2014, Mike consulted for The Cork and Craft Restaurant and was the Opening Executive Chef. Currently, he still facilitates "Clandestine" Dinners w/the The Lab: Dining Sessions, Monthly pop-ups, restaurant consulting and is a gueat Chef at Toronado San Diego's monthly beer brunches.    Chef Mike Arquines is passionate about his wife, his 2 sons, and anything food, coffee, craft beer, and bourbon related.

 Meet Chef Phillip Esteban.  R&D Chef | Consortium Holdings & One of our featured competing Chefs for Boodle Fight: Round 2!!!  Phillip’s professional career began with earning a degree in Culinary Arts from the Arts Institute of San Diego. Soon after, he helped open The Guild in Barrio Logan and began work there in his first Sous Chef position. He then served as the opening Sous Chef for Craft & Commerce of the Consortium Holdings group, and assisted with the opening of three Tender Greens locations throughout California. Realizing that he wanted to pursue cooking at a higher level, he started his fine dining career working at Momofuku Ssäm Bar in NYC. He also continued his quest to train in a broad range of kitchens, which led to staging in many of city’s most renowned restaurants, including Sorrela, Marea, and among many others.  With both the culinary and operational experience gained from this exposure, Phillip returned to Southern California. His first stop was working at Nine-Ten in La Jolla, with Chef Jason Knibb. The opportunity to help launch The Cork and Craft was a perfect chance for Phillip to share his vision of not only a creative space but a nurturing and educational environment.  Coming back full circle to Consortium Holdings, he is now the Research & Development Chef of the hospitality group.
